  • 4 salmon fillets
  • ½ tsp dried Italian herb mix
  • 1 tsp cayenne pepper
  • 2 tbsp softened butter
  • 1 sliced onion
  • 4 chopped garlic cloves
  • ½ red pepper, sliced
  • ½ carrot, peeled into ribbons
  • 1 tsp thyme leaves
  • 4 tbsp mango chutney
  • Squeeze of lemon
  • ½ red chilli, sliced
  • Rub the salmon fillets all over with salt, pepper, the dried Italian herbs and cayenne pepper, then leave to marinate in the fridge for at least an hour.
  • When ready, add the butter to a frying pan and fry the salmon on both sides until cooked through. Remove from the pan and set aside. Toss the garlic, onion, red pepper, thyme and carrot into the pan and stir-fry until caramelised, then remove to a plate. Add the mango chutney to the pan with 100ml water and the lemon juice, then cook until thickened and saucy. Return the veggies to the pan along with the salmon, simmer for 5 mins and baste well in the sauce. Serve immediately with some steamed rice, if you fancy.
