  • 350g quality feta
  • 120ml olive oil
  • 1 lemon, zest only
  • 2 tsp chopped oregano
  • 1 tsp black pepper
  • 40 cherry tomatoes
  • Large bunch of fresh basil
  • 40 skewers
  • Cut the feta carefully into 40 squares and place in a bowl. Pour in the olive oil and lemon zest, oregano, and black pepper, and allow to marinate for 2 hours or longer. Assemble by taking a skewer and popping on a cherry tomato, followed by a feta cube and repeating. Finish by skewering a basil leaf - the perfect picnic snack!
