Mediterranean Chicken Drumstick Bake



  • 1kg chicken drumsticks
  • 1 crushed garlic cloves
  • 1 tsp mixed dried herbs
  • 1 tbsp olive oil
  • 800g sliced potatoes
  • 3 red capsicums, sliced
  • 50g pitted black olives
  • Preheat the oven to 200C and place the chicken drumsticks in a roasting tin. Drizzle with half the oil, scatter with the mixed herbs, seasoning and crushed garlic, and toss together. Place the potato slices in a separate roasting tin, and drizzle with the remaining oil and some seasoning. Roast both tins in the oven for 30 mins, turning halfway.
  • Stir-fry the capsicums for 5 mins, then tip the capsicums in the tray with the potatoes and mix in the olives. Transfer the chicken to the potato tin, toss everything together, then roast for another 15 mins until the chicken is golden and cooked through. Serve hot and enjoy.
