One-Pot Chicken Biryani



  • 300g basmati rice, rinsed
  • 25g butter
  • 1 sliced onion
  • 1 bay leaf
  • 3 cardamoms
  • Half a cinnamon stick
  • 1 tsp turmeric
  • 4 chicken breasts, cut into chunks
  • 4 tbsp medium curry paste
  • 850ml chicken stock
  • 90g raisins
  • 30g chopped coriander
  • Heat the butter in a saucepan and cook the onion with the bay leaf, cardamom pods and cinnamon stick for 10 mins. Sprinkle in the turmeric, then add the chicken to the pan with the curry paste. Cook until aromatic.
  • Stir the rice, raisins and stock into the pan, then pop on the lid and bring to the boil. Reduce the heat to low, and cook for 5 mins. Take off the heat and leave to rest for 10 mins, then stir well and mix in the coriander leaves. Serve hot.
