Orzotto with Pecorino and Greens



  • 1 tbsp olive oil
  • 2 diced onions
  • 2 crushed garlic cloves
  • 300g orzo
  • 1 litre veg stock
  • 250g spring greens or similar, stems removed
  • 200g peas
  • 100g green beans, chopped
  • 15g basil, chopped
  • 50g grated pecorino
  • Heat the oil in a casserole dish and fry the onion for 10 mins. Add the garlic, fry for 1 minute, then stir in the orzo. Mix well and pour in 700ml stock, then simmer for 5 mins.
  • Shred the greens and stir into the orzo with the beans and peas. Simmer for another 10 mins, adding more stock if necessary. Season well with pepper and when the orzo is tender, stir through the cheese and basil, and serve.
