  • 1.5kg pork belly, skin scored
  • 2 tbsp chopped thyme
  • 2 tsp sea salt flakes
  • 1 tsp black pepper
  • 3 apples, peeled and cut into thick slices
  • 2 onions, sliced
  • Handful of sage leaves
  • 2 tsp flour
  • Preheat the oven to 240C. Dry the pork belly, and mix the thyme, salt, and pepper together to make a rub, which should be rubbed all over the meat. Place into a baking tray, roast for 25 mins, then reduce the heat to 180C and roast for another hour.
  • Chuck the apples, onions, sage, and some pepper into a small roasting tin. Remove the pork belly from the oven, and pop it on top of the apple mixture. Roast in the oven for another hour - the meat should be really tender. Leave to rest for 10 minutes, then slice the pork and serve with the roasted apples and onions, and some nice homemade gravy and veggies.
