Perfect Roast Rabbit



  • 1 whole rabbit, about 1.2kg, jointed
  • 2 tbsp thyme leaves
  • 4 tbsp olive oil
  • 12 shallots, peeled
  • 16 garlic cloves, peeled
  • Preheat the oven to 220C. Put the jointed rabbit (legs in 2 pieces, saddle in 3 pieces, and the front in 2) in a large roasting tin, and season well. Add 1 tbsp of thyme leaves along with the oil, and toss to coat. Roast for 20 mins.
  • Add the shallots to the tin with the garlic, stir well and roast for 15 mins more. Sprinkle with a little more thyme, and serve with roast vegetables and gravy, or braised lentils.
