Persian Lamb and Potato Patties

Method

  • 500g minced lamb
  • 400g mashed potato
  • 1 chopped onion, liquid strained away
  • 2 beaten eggs
  • 1 tsp turmeric
  • 1 tbsp garlic granules
  • 75g brown breadcrumbs
  • Veg oil, for frying
  • In a large bowl, mix together the mince, potatoes, onion, spices and eggs, along with plenty of seasoning. With damp hands, divide the mixture into 20 portions, and roll each into a ball and flatten between your palms until 1 cm thick.
  • Press the patties into breadcrumbs on a plate, then shallow fry for 8 mins on each side, or until browned and cooked through. Serve with salad and couscous.
