Pesto and Lemon Chicken

  • 3 cooked chicken breasts, sliced into thin strips
  • 2 avocados, sliced
  • ½ lemon, juice only
  • ½ cucumber
  • 18 cherry tomatoes, halved
  • Pine nuts, to garnish
  • Torn basil, to garnish
  • For the Dressing
  • 4 tbsp green pesto
  • 6 tbsp light mayo
  • ½ lemon, juice only
  • Salt and pepper
  • Make the dressing by combining the pesto, mayo, and lemon in a large bowl and seasoning well. Add the chicken pieces and stir to coat, then leave to marinate for several hours. When ready, place the avo slices in a separate bowl, pour over the lemon juice, and toss to coat.
  • Cut the cucumber in half, remove and discard the seeds, and peel. Cut into crescents and arrange in layers with the avo slices, tomato halves, and pesto chicken. Season well, then scatter with pine nuts and basil. Delicious!
