  • 300g potatoes, cut into chunks
  • 300g sweet potatoes, cut into chunks
  • 2 red onions, sliced into wedges
  • A few thyme sprigs, leaves picked
  • Olive oil for frying
  • 650g pigs-in-blankets (bacon-wrapped chipolatas)
  • 100g stale breadcrumbs
  • Small handful of parsley, chopped
  • 2 tbsp grated parmesan
  • Pinch of chilli flakes
  • 2 tsp cranberry jelly
  • 150g camembert, cut into chunks
  • Preheat the oven to 220C. Pop the potatoes and sweet potatoes in a roasting tin with the onions, thyme, and a glug of olive oil. Season, toss, and roast for 15 mins. Shake the tray, then place the pigs in blankets on the top and roast for 25 mins more.
  • Meanwhile, fry the breadcrumbs in a glug of olive oil until crisp and golden. Stir in the chilli, paprika, seasoning and grated parmesan. Dot the sausages (once browned and cooked through) with cranberry jelly, scatter the camembert over the tray and sprinkle with plenty of your breadcrumbs. Bake for 10 mins more to melt the cheese, then serve as a dinner or side at your dinner party.
