Plaice with Asparagus, Tomato and Potatoes

  • 500g baby new potatoes, halved if large
  • 2 tsp olive oil
  • 150g cherry tomatoes
  • 100g asparagus, trimmed
  • 2 x 150g plaice fillets, dark skin removed if necessary
  • ½ lemon, juice only
  • Knob of salted butter
  • Preheat the oven to 200C. Place the new potatoes in a roasting tin, drizzle with oil and seasoning, and roast for 25 mins. Remove from the oven and turn the potatoes, then nestle in the tomatoes and asparagus.
  • Pop the fish fillets on top, squeeze over the lemon and top each fillet with a piece of butter. Cook for another 12 mins, or until the fish is cooked through. Serve immediately, with more lemon for squeezing.
