Pork Loin with Chickpeas and Paprika

  • 4 x pork loin steaks, seasoned well
  • 1 sliced onion
  • 2 tsp paprika
  • 2 tbsp tomato puree
  • 1 red pepper, diced
  • 400g tin of chopped tomatoes
  • 1 courgette, diced
  • 400g tin of chickpeas, drained
  • Preheat the oven to 190C. Heat the oil in a roasting tin, then add the pork and brown for 2 mins on each side. Remove and set aside. Chuck the sliced onion into the tin and cook for 5 mins, then stir in the paprika and tomato puree, cook for another minute, then add the rest of the ingredients. Season well, return the pork to the tin and cover with foil.
  • Bake the lot in the oven for about 25 mins, or until the pork is cooked through and the vegetables are nice and tender. Serve with brown rice, and enjoy.
