Pork Steaks with Creamy Mushrooms and Mustard

  • 1 tbsp olive oil
  • 4 pork loin steaks
  • 400g sliced mushrooms
  • 1 crushed garlic clove
  • 2 tbsp Dijon mustard
  • 150ml heavy cream
  • 100ml chicken stock
  • Chopped parsley
  • Mashed potato, to serve
  • Heat ½ tbsp of oil in a frying pan and season the pork loin steaks. Fry for 5 mins on each side until golden, then remove to a plate and cover with foil to rest. Heat the remaining ½ tbsp of oil in the pan and fry the mushrooms for 10 mins, then stir in the garlic and fry for a minute more.
  • Reduce the heat to low and stir in the stock, cream and mustard. Stir well and bring to a simmer, then nestle the pork steaks back into the sauce with the resting juices. Cook uncovered for 10 mins or until the pork is cooked and the sauce has thickened. Serve with mashed potato, and enjoy.
