Portuguese Seafood Rice



  • 1 tbsp olive oil
  • 1 sliced onion
  • 100g chopped chorizo
  • 1 tsp turmeric
  • 300g basmati rice
  • 1 litre fish stock
  • 200g peas
  • 400g mixed frozen seafood, defrosted
  • Cook the onion in the oil for 5 mins, then add the chorizo and fry to release the oils. Stir in the turmeric and rice, coating the rice with the pan oils, then pour in the stock. Simmer for 15 mins, stirring occasionally.
  • Tip in the peas, cook for 5 mins, then stir in the seafood to heat through for 2 mins. Once the rice is just cooked, season well and serve with plenty of lemon wedges for squeezing.
