Prawn and Cucumber Canape Skewers



  • 20 cooked and peeled king prawns
  • ½ lemon, juice and zest
  • ½ tsp poppy seeds
  • 1 tsp olive oil
  • 1 cucumber
  • xxMix together the prawns with the lemon juice and zest, the poppy seeds and the oil. Leave to marinate for 20 mins. x
  • Peel 20 strips from the cucumber with a vegetable peeler, going the whole length of the cucumber to make a set of long ribbons. Thread each cucumber ribbon onto a short wooden skewer, weaving it back and forth to make a ruffled effect. Add a whole prawn to the end of each one, and serve chilled at a party or barbecue. Delicious!
