  • 1 thick pork chop or loin steak
  • 1 tbsp olive oil
  • 1.5 tsp finely chopped rosemary
  • 1 chopped garlic clove
  • Salt and pepper
  • For the Balsamic Onion
  • 2 tbsp olive oil

Fry the chop for 2 mins on each side, then roast on a baking tray with a few sprigs of rosemary for 8 mins, or until cooked through. Remove and leave to rest.
  • Meanwhile, heat the olive oil in a saucepan and fry the onion for 6 mins. Add the vinegar and sugar, bring to a simmer, and cook for 2 mins more. Spoon the onion mix onto a plate, then place the pork on top, thickly sliced and garnished with rosemary.
