- 1 clove of garlic, finely chopped
- 25g butter
- 1 tbsp chopped coriander
- 6 big mussels, one shell removed
- 75g fresh breadcrumbs
- Salt and pepper
- Lime wedges, to serve
- Preheat your oven to 200C. Mix together the garlic, butter and coriander in a small bowl.
- Place the mussels flesh-side up on a baking tray. Divide the garlic butter between the mussels, then sprinkle the breadcrumbs over the top. Season well with salt and pepper, then roast in the oven for 5-7 minutes. Transfer to a plate, and serve with lime wedges and some extra coriander.
