Sage Sirloin with Garlic Roasties

  • 1 tbsp olive oil
  • 1 sirloin steak on the bone (approx 500g)
  • 1 garlic bulb, skin-on and bashed
  • 30g butter
  • 6 sage leaves
  • Salt and pepper
  • For the Garlic Roast Potatoes
  • 8 new potatoes
  • 2 tbsp olive oil
  • 3 cloves of garlic
  • Preheat the oven to 220C. Heat a large ovenproof frying pan on a medium-high heat, and season the steak generously. Add the oil to the pan, followed by the steak. Cook for 8-10 mins on each side - without moving around. Add the garlic to the pan, along with the sage leaves and butter, baste well, and pop the lot in the oven for 5 mins for medium, then remove and rest for 15 mins.
  • Boil a large pan of salted water and add the new potatoes until just soft. Drain, and gently break them apart. Add the olive oil to a roasting tray and heat in the oven for 5 mins. Remove the tray, toss in the potatoes and the garlic cloves, and roast for 15 mins until crisp and golden. Slice the steak and serve with the potatoes, steamed greens, and any sauce you fancy.
