Salmon and Broccoli Pasta



  • 150g dried pasta
  • 150g broccoli, cut into florets
  • 1 tbsp olive oil
  • 4 spring onions, sliced
  • 2 salmon fillets, skinned and cut into chunks
  • Pinch of dried chilli flakes
  • 100ml heavy cream
  • 1⁄2 lemon, zest only
  • Salt and pepper
  • Cook the pasta until al dente in a big pot of boiling salted water. Three minutes before the end of the cooking time, chuck the broccoli in the pan, and cook for a couple of minutes until just tender.
  • Meanwhile, heat up the oil in a frying pan, and cook the spring onions for a couple of minutes to soften. Add the salmon and the chilli, and cook for about 4 minutes. Pour in the cream along with a ladleful of pasta water, and season liberally. Bring to a gentle simmer for 4 minutes, then drain the pasta and broccoli, and mix into the salmon sauce. Stir in the lemon zest, gently stir, and serve.
