Sausage and Cream Pasta Bake

  • 1 red onion, cut into 8
  • 2 bell peppers, red and yellow, cut into chunks
  • 2 zucchinis, thickly sliced
  • 1 tbsp olive oil
  • 6 sausages, cut into three chunks
  • 200g penne
  • 300ml cream
  • 50g grated cheddar cheese
  • Salt and pepper
  • Preheat the oven to 22C. Put all the veg in a roasting tin, season well and toss in oil, and roast for 10 mins. Add the sausage chunks, and roast for 20 mins more.
  • Meanwhile, cook the pasta in boiling salted water for 10 mins, then drain. Add the pasta to the veg and sausages, pour over the cream, and toss it all together. Sprinkle the top with cheese, then cook for 5 minutes until the cheese is golden and bubbling. Serve immediately - yum!
