Sausage and Zucchini Pilaf

Method

  • 100g basmati rice
  • 1 tsp veg oil
  • 3 quality pork sausages, meat squeezed out of the skins
  • 1 tsp black onion seeds
  • 1 zucchini, sliced
  • 100g peas
  • 200ml veg stock
  • ½ bunch of mint and dill, finely chopped
  • 2 tbsp yoghurt
  • Heat the oil in a medium lidded saucepan, and fry the sausage meat for 3 mins until golden. Stir in the seeds and zucchini, and fry for 2 more minutes. Stir in the rice, stock, peas, and about half the herbs, then pop the lid on and simmer for 10-12 mins, or until the rice is tender.
  • Fold the remaining herbs into the rice, and serve with a big dollop of yoghurt. Delicious!
