Sesame Cod Broth

Ingredients

Method

  • 100g cod fillet or other flaky white fish
  • 1 tsp sesame oil
  • 2 tsp soy sauce
  • 2 tsp honey
  • 1 tsp sesame seeds
  • 1⁄2 pint chicken stock
  • 1 tbsp soy sauce
  • 1⁄2 tsp chilli flakes
  • 50g frozen peas
  • 3 tbsp coriander, chopped
  • Marinate the cod for 15 minutes in a bowl with the soy sauce, sesame oil, and honey. When ready, place in a steamer (or a colander with some tin foil) and steam for 12 minutes.
  • Meanwhile, make the broth. Cook the chicken stock in a pan with the soy sauce and chilli flakes, infusing for 5 minutes. Toss in the peas and coriander, and cook for a further minute. Serve the cod in a deep bowl, on top of the broth, sprinkled with sesame seeds.
