- 15g fresh basil
- 30g baby spinach
- 1 tbsp freshly grated parmesan
- 3 tbsp olive oil
- Juice of 1 lemon
- 140g chopped bacon
- 500g pack of gnocchi
- Make the pesto by blending together the basil, spinach, olive oil, and parmesan. Season well with salt and lemon juice.
- Cook the bacon pieces in a frying pan for 5 minutes, or until golden and crispy. While this is frying, cook the gnocchi according to pack instructions, in salted water. Drain the gnocchi once it has risen to the top of the pan, then return to the pan along with the bacon and pesto. Stir well, season once more to taste, and serve.
