Simple Parmesan Biscuits

  • 125g chilled cubed butter
  • 125g flour
  • 25g grated parmesan
  • Salt and pepper
  • A pinch of cayenne pepper
  • Preheat the oven to 180C. Rub the butter and flour together until it looks like fine breadcrumbs, then stir in the parmesan, seasoning, and some cayenne. Work into a ball, and knead on a floured surface until smooth.
  • Cut the dough ball in half, flatten each half, and roll out between 2 sheets of film. Lift off the top sheet of film, cut into 5cm biscuits with a knife and water glass, or with a cookie cutter. Lift onto a buttered baking sheet, and repeat until you have 30 or so biscuits. Bake for 8-10 mins, then leave to cool. Serve as part of a picnic, or with salads and charcuterie.
