Simple Patatas with Salsa Brava

  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1⁄2 tsp chilli flakes
  • 1⁄2 tsp hot sauce
  • 1 tbsp red wine vinegar
  • 125ml tomato sauce or passata
  • 1.5kg potatoes, peeled
  • 180ml olive oil for frying
  • Salt
  • Make the salsa by heating up the olive oil, adding the paprika, chilli, hot sauce, and vinegar, and mixing well in a saucepan. Stir in the sauce and season well, thinning a little with water if necessary. Allow to cook for a couple of minutes, then put to one side.
  • Cut the potatoes into even-sized cubes. Cook in a pan of salted water for 7 minutes, then drain well. Heat the olive oil in a large, non-stick frying pan, and fry the potato cubes for 10-12 minutes or until crisp and golden. Drain on kitchen paper, season with sea salt flakes and sprinkle with more paprika. Serve immediately.
