Simple Pork, Chickpea and Zucchini Casserole



  • 2 tbsp olive oil
  • 250g pork fillet, cut into small cubes
  • 1 sliced onion
  • 1 red capsicum, sliced
  • 1 zucchini, sliced into semi circles
  • 2 sliced garlic cloves
  • 1 tsp smoked paprika
  • 400g tin of chickpeas, drained
  • 400g tin of chopped tomatoes with herbs
  • 200ml chicken stock
  • Season the pork and fry in 1 tbsp of oil for 2 mins to brown all over, then remove from the pan and set aside. Toss the onion, capsicum and zucchini into the pan with the remaining oil and cook for 5 mins to soften.
  • Stir in the garlic, chickpeas, tomatoes and paprika along with the stock. Return the pork to the pan, simmer for 10 mins to thicken the sauce, then serve with crusty bread.
