Simple Satay Chicken Strips



  • 2 tbsp chunky peanut butter
  • 1 grated garlic clove
  • 1 tsp curry powder
  • ½ tbsp soy sauce
  • 2 tsp lime juice
  • 2 chicken breast fillets, cut into thick strips
  • 10cm cucumber, cut into fingers
  • Sweet chilli sauce, to serve
  • Preheat the oven to 200C, and line a baking tray with parchment. Mix 2 tbsp of peanut butter with 1 grated garlic clove, the curry powder, the soy sauce, and the lime juice in a bowl. Add the chicken strips, and mix well.
  • Arrange the chicken pieces on the baking tray and bake for 10 mins, then serve hot with the cucumber fingers and sweet chilli sauce.
