Ingredients
Method
- 1 tbsp olive oil
- 1⁄2 onion, finely chopped
- 1 garlic clove, crushed
- 1 large tomato, deseeded and chopped
- 2 tbsp red wine vinegar
- 1 tsp caster sugar
- 100g tagliatelle, cooked al dente
- 2 tbsp fresh chives, chopped, for garnish
- Heat the oil in a frying pan, and add the onion and garlic to soften for a minute or two. Stir in the tomato, vinegar, and sugar, and cook for 4 more minutes. Blend the mixture until smooth with a stick blender or food processor, the stir through the cooked tagliatelle. Serve piping hot with a garnish of chopped chives and a grind of black pepper.
