Sirloin Steak with Miso Pak Choi

Ingredients

Method

  • 2 pak choi, quartered
  • 1 tbsp olive oil
  • 1 tbsp white miso paste
  • ½ tbsp lemon juice
  • 1 tsp runny honey
  • 1.5 tsp sesame oil
  • 1 crushed garlic clove
  • 1 chopped red chilli
  • 125g butter
  • 1 tsp wasabi
  • 2 x 180g sirloin steaks
  • Preheat the oven to 220C. Place the pak choi in a baking tray and drizzle with half the oil, then roast for 7 mins. Meanwhile, mix the lemon juice, miso, honey, sesame oil, chilli and garlic in a small bowl. Remove the pak choi from the oven and brush with the marinade, then return to the oven for 10 mins.
  • Mix the butter and wasabi in a small bowl. Heat the remaining oil in a pan and season the steaks, then fry for 2 mins on each side. Add the wasabi butter to the pan for the final minute of cooking and baste the steaks well. Transfer to a plate to rest for 5 mins. Serve the steaks with the miso pak choi, and a drizzle of wasabi butter from the pan.
