Smoked Haddock with Chives and Tomatoes

Ingredients

  • 2 tbsp white wine vinegar
  • 1 fillet of smoked haddock, halved
  • 1 bay leaf
  • 200g new potatoes, cooked and sliced
  • 3 sliced tomatoes
  • For the Dressing
  • 1 chopped shallot
  • 3 tbsp olive oil
  • 2 tsp Dijon mustard
  • Small bunch of chives, finely chopped
  • In a small bowl, whisk together the dressing ingredients with 1 tsp of water, and set aside. Bring a shallow pan of water to boil with the bay leaf and vinegar, then add the fish fillets and gently poach for 5 mins. Remove with a fish slice and set aside.
  • Place the sliced new potatoes onto two plates, and surround with slices of tomato. Drizzle with a bit of the dressing, then peel off the skin of the haddock and lay on top of the potatoes. Drizzle with the remaining dressing, and serve.
