Smoked Salmon Spaghetti

  • 1 tbsp olive oil
  • 2 sliced garlic cloves
  • ¼ tsp chilli flakes
  • 2 zucchini, grated
  • 200g spaghetti
  • 2 tbsp crème fraîche
  • ½ lemon, zest and juice
  • 100g chopped smoked salmon
  • 40g rocket leaves
  • Salt and pepper
  • Fry the sliced garlic in the olive oil until just golden. Tip in the chilli flakes and grated zucchini, and cook until nicely softened. Meanwhile, cook the spaghetti until al dente, then transfer the pasta to the pan with the zucchini. Add about 100ml of pasta water, and mix to combine. Stir in the creme fraiche, salmon, and rocket, then season well and serve.
