Smoky Orzo Soup



  • 1 tbsp olive oil
  • 1 red onion, chopped
  • 4 garlic cloves, chopped
  • 400g tin of butter beans, drained
  • 200g passata
  • 85g orzo
  • 700ml veg stock
  • 1 heaped tsp smoked paprika
  • 100g kale, shredded
  • 4 tbsp red pesto
  • Salt and pepper
  • Fry the onion in a large pan for 5 minutes, then add the garlic and fry for 2 minutes more. Add the beans, passata, stock, paprika, and orzo, and simmer for 10 minutes, or until the orzo is al dente.
  • Chuck in the kale along with some salt and pepper, and simmer for a couple of minutes to wilt. Taste, season accordingly, and serve in bowls with a big dollop of pesto.
