Smoky Orzo Soup

Ingredients

Method

  • 1 tbsp olive oil
  • 1 red onion, chopped
  • 4 cloves of garlic, chopped
  • 400g tin of butter bins, drained
  • 200g passata
  • 85g orzo
  • 700ml veg stock
  • 1 heaped tsp smoked paprika
  • 100g kale, chopped
  • 4 tbsp pesto
  • Salt and pepper
  • Heat up the oil in a large pan, and fry the onion for 5 minutes. Add the garlic, fry for another minute, then tip in the beans, passata, orzo, paprika, and stock, and bring up to the boil. Simmer for 10 minutes, or until the orzo is al dente.
  • Chuck in the kale and plenty of seasoning, then simmer for 4 minutes more. Season again to taste, then serve in bowls and top with a tbsp of pesto.
