Smoky Paprika Pork



  • 1 tbsp olive oil
  • 2 sliced onions
  • 400g pork fillet, sliced into thick strips
  • 250g sliced mushrooms
  • 1.5 tbsp smoked paprika
  • 1 tbsp tomato purée
  • 200ml hot chicken stock
  • 100ml soured cream
  • Cooked brown rice, to serve
  • Cook the onions in the oil for 10 mins or until softened and golden. Add the mushrooms and pork strips, and cook for 4 mins to brown. Stir in the paprika, and cook for another minute to combine.
  • Stir in the tomato purée, pour in the stock, and simmer for 10 mins to cook the pork through. Mix in the soured cream and plenty of seasoning, and then serve with a mound of brown rice.
