Ingredients
Method
- 1 tbsp olive oil
- 1 chopped onion
- 1 crushed garlic clove
- 1 chopped celery stalk
- 2 red capsicums, chopped
- 6 pork sausages
- 1 tsp smoked paprika
- ½ tsp ground cumin
- ½ tsp chilli flakes
- 2 x 400g tins of chopped tomatoes
- 400g tin of cannellini beans, drained
- 250g spinach leaves
- 2 tbsp breadcrumbs
- Fry the onion in the oil in a casserole dish for 5 mins, then add the garlic, capsicums, and celery, and stir. Cook for 5 mins more, then add the sausages to the pot. Cook to brown all over, reduce the heat to minimum, then add the spices and seasoning. Pour in the tomatoes and bring to a simmer, then cover and cook for 40 mins.
- Preheat the grill, and uncover the casserole. Add the beans and spinach and stir to warm through. Scatter the breadcrumbs over the top, and grill for 3 mins until golden. Serve piping hot.
