Ingredients
Method
- 1 sweet potato, roughly diced
- 1 red capsicum, cut into chunks
- 1 red onion, cut into chunks
- 3 whole garlic cloves
- 1 tsp smoked paprika
- 2 tbsp olive oil
- 200ml coconut milk
- 200ml chicken stock
- ½ tbsp sriracha or similar
- 1 tsp maple syrup
- Preheat the oven to 190C. Pop the potato, capsicum, garlic and onion on a tray, sprinkle with paprika and seasoning, and drizzle with the oil. Toss well, then roast for 30 mins. Tip into a blender with the coconut milk, stock, syrup and sriracha, then whizz until nicely smooth. Check the seasoning, and serve with toasted sourdough.
