Spanish Meatballs and Cheese Traybake

  • 500g new potatoes, quartered
  • 2 tbsp olive oil
  • 200g baby plum tomatoes, halved
  • 200g crumbled feta
  • Chopped parsley
  • For the Meatballs
  • 400g pork mince
  • 200g chopped chorizo
  • 1 egg
  • 1 crushed garlic clove
  • 1 grated onion
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Preheat the oven to 200C. Toss the potatoes in the oil and plenty of seasoning, then roast in the oven for 20 mins.
  • Put all of the meatball ingredients in a bowl, season well and mix until combined. With damp hands, shape the mixture into 24 meatballs and add them to the roasting tin with the potatoes. Bake for 15 mins, then add the tomatoes and feta. Bake for 15 mins more, then scatter with parsley and serve. Nice!
