Spanish-Style Chicken Pie



  • 1kg chopped Maris Piper potatoes
  • 3 tsp smoked paprika
  • 2 tsp olive oil
  • 1 sliced onions
  • 2 crushed garlic cloves
  • 2 x 400g tins of chopped tomatoes
  • 300g cooked chicken, shredded between forks
  • 150g roasted red peppers from a jar, sliced
  • Handful of pitted black olives, halved
  • Preheat the oven to 200C. Boil the potatoes in salted water for 20 mins or until tender, then drain and mash with some seasoning and 2 tsp of smoked paprika.
  • Meanwhile, fry the onions and garlic in the oil until softened. Stir in the remaining paprika, cook for 1 minute, then add the tomatoes and bring to a simmer. Tip into an oven dish and stir in the peppers, olives, chicken and some more seasoning. Spoon over the mash, bake for 15 mins, then serve with your choice of sides.
