Spanish-Style Pork Chops in Red Wine Sauce

  • ½ chopped red onion
  • 1 chopped garlic clove
  • 75g cooking chorizo, chopped
  • 1 tbsp tomato puree
  • 2 x 400g tins of chopped tomatoes
  • 100ml red wine
  • 40g pitted black olives
  • 2 bone-in pork chops
  • Crusty bread, to serve
  • Preheat the oven to 180C. Heat a glug of oil in a saucepan and fry the onion for 8 mins to soften. Add the garlic and fry for a minute more, then stir in the chopped chorizo and tomato paste, and fry for another 3 mins before adding the chopped tomatoes, olives and red wine. Bring to a simmer for 5 mins, then pour the sauce into a baking dish and cook in the oven for 15 mins.
  • Heat another glug of oil in a pan and cook the pork chops for 3 mins on each side or until nicely browned. Stir the sauce, pop the chops on top, and return to the oven for 15 mins. Serve with crusty bread - delicious!
