Spiced Chocolate Fondue

  • 250ml whipping cream
  • 50ml whole milk
  • A piece of pared orange zest
  • 1 broken cinnamon stick
  • 1⁄2 vanilla pod, split lengthways
  • 1 chipotle chilli, split
  • A few cloves
  • 1 tsp lightly crushed allspice berries
  • 2 blades of mace
  • 1⁄2 tsp lightly crushed peppercorns
  • 1 tbsp ground ginger
  • 350g quality dark chocolate
  • Pinch of sea salt
  • 100ml ginger syrup
  • Cubes of fruit cake, to serve
  • Fresh fruits, to serve
  • Put the cream, milk, orange zest, cinnamon, vanilla pod, chilli, cloves, allspice, mace, peppercorns, and ginger into a saucepan, slowly bring to the boil, then allow to cool to room temperature. Strain through a sieve.
  • Break up the chocolate, and add it to the spiced cream. Melt over a gentle heat, whisking continuously until creamy and smooth. Transfer to a fondue bowl, light the candle, and tuck in with your fruit and cake pieces. Heaven!
