Ingredients
Method
- 1 tomato, finely chopped
- 4 tbsp finely chopped cucumber
- 1 green chilli, chopped
- 2 tbsp chopped onion
- Handful of coriander, chopped
- 2 tbsp salted peanuts, chopped
- 1 tbsp desiccated coconut
- 1⁄4 tsp grated ginger
- Salt
- 1 tsp veg oil
- 1⁄4 tsp black mustard seeds
- 4 curry leaves
- 1 tbsp lemon juice
- Mix all of the salad ingredients together in a serving bowl.
- Make your spice mixture by heating the oil in a small pan, and chucking in the mustard leaves. When they start to sizzle, add the curry leaves, and remove from the heat. Stir in the lemon juice. Pour the spice mixture all over the salad, toss well, and serve.
