  • 25g butter
  • 2 tbsp sugar
  • ½ lemon, juice only
  • ½ pineapple, peeled, cored and quartered
  • Pinch of ground ginger and cinnamon
  • Whipped cream, to serve
  • Preheat the oven to 220C. Melt the butter, lemon juice and sugar in a frying pan and add the pineapple pieces, stirring to coat thoroughly.
  • Add the cinnamon and ginger and place in the oven for 10 mins, or until the pineapple has softened and browned. Serve in a bowl with a dollop of cream, and enjoy!
