Ingredients
Method
- 12 whole scallops in the half shell
- 2 tbsp finely diced red onion
- 1 chopped red chilli
- 2 tbsp chopped fresh coriander
- 2 tbsp soy sauce
- 2 tbsp olive oil
- 2 tbsp lemon juice
- Arrange the scallops, open-side up, on a large baking tray and preheat your grill to a high setting. Mix the onions, coriander, chilli, soy sauce, lemon juice and olive oil in a small bowl, then spoon the dressing evenly over the scallops.
- Place the scallops until the grill and cook for 6 mins or until golden and bubbling. Remove from the oven and serve immediately with lemon wedges for squeezing - the perfect seafood starter!
