Spicy Kale with Onion and Tomato

Ingredients

Method

  • 2 tbsp olive oil
  • ½ onion, finely chopped
  • 1 garlic clove, finely sliced
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • Pinch of chilli flakes
  • 1 tomato, deseeded and chopped
  • 85g kale, trimmed and blanched for 3 mins in boiling salted water, drained
  • Salt and pepper
  • Fry the onion and garlic in a little oil for a few minutes to soften. Add the spices, stir well, and fry for a further 2 minutes. Chuck in the tomatoes and the kale, cook for 3 more minutes, then season with salt and pepper. Serve hot as a side.
