Stovetop Bacon Penne ‘n’ Cheese

  • 300g penne
  • 2 tbsp olive oil
  • 100g smoked bacon, chopped
  • 1 red capsicum, sliced
  • 2 tbsp flour
  • 550ml milk
  • 100g mature cheddar, grated
  • 125g baby spinach
  • Cook the penne until al dente in boiling salted water and drain. Meanwhile, heat ½ tbsp of oil in a saucepan and fry the bacon for 8 mins. Remove and set aside. Add the capsicum to the pan and cook for 5 mins, then remove that too.
  • Add 1.5 tbsp of oil to the pan and stir in the flour to make a roux. Cook for 1 minute, then gradually add the milk, stirring continuously until a thick sauce is achieved. Stir in the pasta, capsicum, cheese and spinach and cook until the cheese has melted. Season well, then serve in bowls topped with the crispy bacon.
