  • 2 tbsp cornflour
  • ¼ tsp sea salt
  • 3 tsp smoked paprika
  • 800g sweet potato, cut into thick slices
  • 3 tbsp veg oil
  • 400g chicken thighs (optional), chopped
  • 1 tsp garlic granules
  • 2 capsicums, sliced
  • 150g cherry tomatoes, halved

  • For the Toppings
  • 4 tbsp mayo
  • 2 grated garlic cloves
  • 1 tbsp chilli sauce
  • 60g grated Cheddar
  • 2 sliced spring onions
  • 1 tbsp chopped coriander
  • Preheat the oven to 220C. Mix the cornflour, salt, and 2 tbsp of smoked paprika in a bowl. Add the potatoes and mix well to coat, then pour in 2 tbsp of oil and mix again. Divide between two lined baking trays and cook for 20-25 mins.
