Sweetcorn Fritters with Mango Sauce

  • 100g flour
  • 1 tsp baking powder
  • 2 egg yolks
  • 3 tbsp milk
  • Salt and pepper
  • 2 egg whites
  • 1⁄2 tin of sweetcorn
  • For the Mango Salsa
  • 1 tbsp butter
  • 3 tbsp sweetcorn
  • 1⁄4 red chilli, diced
  • 1⁄2 mango, finely chopped
  • 3 tbsp fresh coriander
  • Preheat the oven to 220C. Whisk the flour, baking powder, and egg yolks together, then add milk to make a batter. Season well. In a separate bowl, whisk the whites until stiff, and fold into your batter along with the sweetcorn. Pour portions of the mixture onto a baking sheet, and bake for 10 mins or until puffed up and set.
  • Mix all of the salsa ingredients in a pan (apart from the coriander). Add a little water, and simmer for 5 mins. Add the coriander and stir through, then serve alongside the fritters.
