  • For the Dressing
  • 3 tbsp sweet chilli sauce
  • 2 tbsp lime juice
  • 2 tbsp sesame oil
  • For the Pork
  • 2 tsp Thai fish sauce
  • Chopped coriander
  • 1 chopped garlic clove
  • 4 pork chops
  • 1 cucumber, cut into 3cm pieces
  • 1 mango, cut into 3cm pieces
  • 1 sliced red onion
  • Steamed jasmine rice, to serve
  • Make the dressing by mixing the ingredients in a small bowl. Take 1 tbsp of the dressing and put into a mixing bowl with the fish sauce, remaining sesame oil, the garlic, pork chops and half the coriander. Toss well to coat the meat thoroughly.
  • Preheat the grill. Mix together the mango, cucumber, onion and remaining coriander in a serving bowl. Grill the chops for 3 mins on each side, then dress the salad and serve alongside the grilled chops, with a heap of steamed rice on the side. Enjoy!
