Tofu and Greens Stir Fry



  • 2 tbsp oil
  • 4cm piece of ginger, finely diced
  • 2 crushed garlic cloves
  • 1 chopped onion
  • 125g mushrooms, quartered
  • 300g broccoli, chopped
  • 125g kale, chopped
  • 200g tofu, cubed
  • 2 tbsp soy sauce
  • 2 tbsp toasted sesame seeds
  • Stir-fry the ginger, onion and garlic in the oil for 3 mins, then tip in the mushrooms, kale, broccoli and tofu and toss everything together. Stir through the soy sauce, then cover and cook for 7 mins to steam. Stir-fry for another 2 mins, and serve sprinkled with sesame seeds and crushed chilli flakes.
