Vegan Chilli Loaded Fries

  • 400g French fries, cooked
  • 2 tbsp olive oil
  • 1 chopped onion
  • 1 avocado
  • ½ lime, juice only
  • ½ chopped red onion
  • 1 chopped tomato
  • 1 crushed garlic clove
  • ½ tbsp chipotle paste or similar
  • ½ tsp each ground cumin and coriander
  • 400g tin of mixed beans, drained
  • ½ 400g tin of chopped tomatoes
  • Small bunch of coriander, chopped
  • Heat the oil in a pan and fry the onion for 10 mins. Meanwhile, mash the avo with the lime juice, red onion, and chopped fresh tomato to make your guacamole.
  • Add the chipotle, garlic, and ground spices to the onions along with some seasoning, fry for a minute or two, then tip in the chopped tomatoes and mixed beans. Simmer for 10 mins, add the chopped coriander, and check your seasoning. Serve on top of freshly-made French fries with your guacamole on the side or spooned on top. Yes please!
